Cole Slaw
Makes 4 Servings

1 small head cabbage, shredded

1 small onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

1 small carrot, shredded
1/2 cup cider vinegar

3 tablespoons cane sugar

1/2 teaspoon salt

1/4 teaspoon black pepper, freshly
ground

1/2 cup canola oil

In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper, and
the carrot.

Combine the vinegar, sugar, salt, pepper, and oil in a separate bowl and mix well.  
Combine this marinade with cabbage and vegetables.  Toss until the vegetables are
fully coated with marinade.  Let sit for marinade to soak in for a while if time allows.
Green Beans with Garlic
Makes 4 Servings

1 pound tender green beans

1 tablespoon olive oil

3 tablespoons garlic, minced

2 tablespoons dry bread crumbs

2 tablespoons chopped parsley

2 tablespoons butter

Salt and pepper to taste

Steam green beans for 6 to 8 minutes or until tender-crisp, then drain.  Refresh in ice
water and drain.

Heat olive oil in non-stick skillet over low hear.  Add garlic, bread crumbs, parsley, and
seasonings.  Cook for 1 minute, stirring constantly.  Add butter, cook until butter melts.  
Add green beans.  Cook unteil heated through, stirring constantly.  Arrange in serving
dish.
