Orange-Glazed Beets Over
Greens
Makes 4 Servings
3/4 cup orange juice

1/2 Tablespoon cornstarch

1/2 t. grated orange rind
1/4 t. ground ginger

2 cxups sliced cooked beets
Cut the beets and save greens.  Place beets in a baking sheet and cover with foil.  Bake
for about 30 minutes.  You can also cook them on dthe stove top with a little water.

Combine first 4 ingredients (juice, cornstarch rind, ginger) in a medium non-stick skillet,
stirring well.  Bring to a boil over medium heat; cook 1 minute or until sauce thickens,
sitrring constantly.

Peel the beets by rubbing the peeling off with a paper towel.  Slice and add to the sauce
and cook until heated.  Steam the greens or cook them in a little water until they are soft.
 Top with glazed beets.
Quick Caesar Salad
Makes 4 Servings
1.2 cup Caesar dressing

1 large Romaine Lettuce (about 10 cups)

Freshly ground pepper
1 cup croutons

1/3 cup Parmesan Cheese
Pour dressing into large salad bowl.  Tear romaine into bite-size pieces and add to bowl;
toss until lettuce is coated.  Sprinkly with croutons, cheese, and dressing.
